Fresh Guacamole
We could eat Mexican inspired food EVERY single day. So tasty :)
We don’t always follow this exact guacamole recipe, as we like to use what we have on hand, there’s lots you can do to change it up and have it still be delicious, but this is our ideal combo of ingredients.
We have this really tasty chili & lime seasoning that we picked up from Winners/Homesense (see image above). We use it all the time! This recipe substitutes for that because obviously that specific seasoning is harder to find. If you do purchase it though, just use 1-2 tsp in place of the pepper, paprika and chili powder, and maybe use a little less salt.
You could also add cumin, but we’re not so crazy about cumin, so we leave it out.
Make sure your avocados are ripe! If they aren’t soft enough, they’ll be hard to mash and won’t taste as good. You dont want them to be too ripe either with black/grey spots that can’t be cut out. It’s that delicate balance that sparked countless memes
INGREDIENTS:
juice from one lime
half a jalapeño pepper chopped up (remove seeds for mild version, leave in half the seeds for spice)
1 tsp salt
4 - 5 ripe avocados
half tomato, diced (gooey insides removed)
1/4 - 1/2 an onion, diced
1 clove garlic, pressed or minced
handful fresh chopped cilantro
1/4 tsp pepper
1/4 tsp paprika
1/4 tsp chili powder
METHOD:
1 - A friend told us this secret and it seems to work! Using a mortar + pestle (or a fork/spoon) mash up the chopped jalapeño, salt and lime juice. Set aside.
2 - Chop up the tomato, onion and cilantro. set aside.
3 - Slice avocados in half lengthwise, remove the seed, and remove any black spots with a spoon. Use a knife to slice the avocado half into little pieces, like a grid, then spoon it out into your bowl.
4 - Pour the lime + jalapeño + salt mixture over the avocado and mash it up using a fork. We like to keep it a bit chunky. Add the chopped tomato, onion, cilantro, garlic and spices. Taste and adjust spices as needed.
5 - The lime juice will help prevent the guac from oxidization browning, but you can also save the avocado seed and stick it in there to help as well! It is best to let it sit (covered in the fridge) for at least an hour for all the flavours to incorporate, but not necessary. Serve as an appetizer with corn chips, or as a topping on tacos, burritos, etc.
