Vegan French Toast
Vegan french toast served here with blackberries, bananas and roasted walnuts

Straight up, veganized french toast. It’s pretty easy to make and tastes delicious! This can easily be made gluten-free by using GF bread.

This recipe was adapted and inspired by others online. We topped ours with bananas, blackberries, roasted black walnuts, maple syrup and a sprinkle of icing sugar.

INGREDIENTS:

1 cup unsweetened plant milk (soy, oat, coconut, almond, etc.

2 heaping tbsp ground flaxseed

2 tbsp maple syrup

1/2 tsp cinnamon

1/2 tsp vanilla

1/8 tsp ginger powder

1/8 tsp nutmeg

pinch of black pepper

Half a French bread loaf, sliced thick

METHOD:

1 - Whisk all ingredients (except the bread) together in a bowl. Cover and put in fridge for 15 - 20 minutes to set. Remove from fridge, whisk again.

2 - Slice the bread fairly thick and dip into the mixture to coat both sides. Allow excess to drip off before placing in a frying pan over medium heat. Cook a few minutes each side, flipping over a few times until desired crispness is reached. Remove from heat and serve immediately.

Topping suggestions:

Maple syrup, a sprinkle of icing sugar, fresh fruit, roasted nuts, cocoa nibs, hemp seeds, chia seeds, coconut whipped cream, etc.

Makes: 3 - 4 servings

Prep time: 20 - 25 minutes

Cook time: 10 - 15 minutes

Store leftovers: Air-tight container, in the fridge

Lasts: 2 - 3 days
