Vegan Banana Bread + Muffins

Are you staring at some really ripe bananas and not sure what to do with them? Make some banana bread! This is an absolutely delicious and healthier version of the classic loaf you may have grown up enjoying. It’s a great breakfast or snack that you can feel good about eating. For an extra healthy kick, we like to include some hemp seeds and chaga mushroom powder.

INGREDIENTS:

WET:

2 very ripe bananas

2 tbsp ground flaxseed

2 tbsp maple syrup

1 heaping tbsp peanut butter (any nut butter works here)

1/3 cup plant milk (soy, almond, coconut, oat, etc.)

1/3 melted coconut oil (can sub melted vegan butter)

1 tsp vanilla

DRY:

1/4 cup coconut sugar

1/2 cup quick rolled oats

1/2 tsp salt

1 tsp cinnamon

1/2 tsp ginger powder

1/4 tsp nutmeg

1 + 1/2 tsp baking soda

1 cup all purpose flour (can substitute with Spelt flour)

3/4 cup roasted nuts (pecans or walnuts work well) + save a handful of raw nuts to top bread with

Optional:

2 tbsp hemp seeds (can also sprinkle some on top)

1 tbsp chaga mushroom powder (for extra health benefits)

METHOD:

1 - Chop and dry roast the nuts in a pan on medium-low heat or in the oven for about 10 minutes, set aside. If desired, save a small handful of raw nuts to sprinkle on top of the bread just before putting in the oven.

2 - Preheat oven to 350°F. If making a loaf - line a loaf pan with parchment paper. If making muffins - line muffin tray with muffin liners, or create your own using squares of parchment. If you don’t have parchment paper or muffin liners, you could instead grease your pan/tray with coconut oil/vegan butter.

3 - Mash the bananas in a large bowl using a fork. Add all wet ingredients in the order listed and stir to combine. Ground flaxseed is included in the wet ingredient list because it needs a few minutes mixed in with the wet ingredients to thicken up and act as a binder/egg replacer.

4 - Add all dry ingredients, one by one in the order listed and stir to combine. Add the mixture to your loaf pan/muffin tray and Don’t forget to top off with nuts before baking.

5 - Bake loaf for 45 - 50 minutes. Bake muffins for 20-25 minutes. Let cool before enjoying. Best enjoyed with vegan butter.

Store: Air-tight container, or wrapped to seal
