Crispy Roasted Chickpeas 5 ways

crispy roasted chickpeas, five flavour combinations: salt + pepper, smoky bbq, ancho turmeric + lime, sesame garlic + ginger, maple + cinnamon.

This is a really tasty, crunchy and healthy snack. There's five flavour combos listed here but you can get creative and combine any flavours you like. A variety of spice blends work, so have fun experimenting with what you already have at home. These are also a great topping for salads and bowls.

INGREDIENTS:

1 can of chickpeas

Salt + pepper:

2 tbsp avocado oil

1/2 tsp salt

1/2 tsp pepper

Smoky BBQ:

2 tbsp avocado oil

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp pepper

Ancho, turmeric + lime:

1/2 tsp turmeric

1/2 tsp ancho chili powder

1/2 tsp salt

juice from 1/2 a lime

Sesame, garlic + ginger: (Our Fave!)

2 tbsp sesame oil

1/2 tsp salt

1 tsp garlic powder

1/2 tsp ginger powder

Maple + cinnamon:

1 + 1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger powder

1 tsp apple cider vinegar

(Bake coated in above ingredients for the first 30 minutes, then toss the chickpeas in the maple syrup and sugar, and bake for the remaining 15 minutes.)

2 tbsp maple syrup

1 tsp cane sugar

METHOD:

1 - Drain chickpeas and rinse well with cold water. You can reserve the liquid from the can (a.k.a. Aquafaba) and refrigerate for use in other recipes if desired.

2 - Gently dry the chickpeas - 2 options:

Quick option - Lay a few pieces of doubled paper towel down and place the chickpeas on top. Fold paper towel over top and gently pat down to dry the chickpeas. The skins of the chickpeas may become loose which is totally fine, they crisp up really nicely, like little chips.

Option 2 - If you have the time, lay the chickpeas out to air dry, approx 30 mins. This will help add to the crispiness.

3 - Heat oven to 400°F. Place chickpeas in a large bowl, add remaining ingredients and stir to coat.

4 - Line a baking sheet with parchment paper. Spread the coated chickpeas out in a single layer, don’t bunch them up too much so they can crisp up better. Place in the heated oven and set timer for 15 minutes. After 15 mins, use a spoon to gently toss them around and put back in over for 15 mins. Repeat until desired crispiness is reached. Usually 45 mins. Let cool and enjoy!

Store: Airtight container/jar - after letting cool completely for a couple hours.
