These fruity herbal popsicles are refreshing, tasty, and the perfect treat to cool you off on a hot summer day. They’re easy to make, all you need is a popsicle mold tray, fresh fruits + herbs, lemon or lime, and a natural sweetener like agave or maple syrup.

INGREDIENTS:

The amounts you use depend on how many you intend to make. We recommend starting off with:

1 - 2 handfuls of fresh fruit (you can use frozen as well, but let them thaw a bit)

A small handful of fresh herbs

juice from half a lemon or lime

1 tablespoon of liquid sweetener, we prefer maple or agave syrup.

Below are the combinations we made, and they turned out delicious. Experiment with your favourite fruits and don’t hesitate to add some fresh herbs for a botanical spin on a classic summer treat.

Watermelon, strawberry, fresh basil, lime juice, and maple syrup

Peach, mango, fresh rosemary, lime juice, and agave syrup

Pineapple, cucumber, fresh mint, lemon juice, and agave syrup

METHOD:

1 - Add ingredients to a blender and pulse until well combined. Taste it to see if you’d like to add anything else. If it’s too thick, add a little water, (or coconut water for added natural electrolytes!)

2 - Pour into popsicle molds and place in freezer overnight.

Makes: 4 - 6 popsicles
