Vegan Caesar Dressing
Caesar salad dressing is not hard to veganize at all. Whip this up in a matter of minutes to enjoy as a classic caesar salad with vegan chicken strips (Gardein brand shown here) or as a condiment to dip your veggies in.
Try using kale instead of romaine lettuce for an extra boost of nutrition. We fried up some chopped vegan bacon to sprinkle on top. We also made some croutons from day-old bread.
INGREDIENTS:
1/2 cup vegenaise (or other vegan mayo, homemade vegan mayo)
1 tbsp dijon mustard
1/2 tsp apple cider vinegar
1 tsp soy sauce (use tamari for GF option)
1 tbsp maple syrup (or agave syrup)
1 tbsp olive oil
2 tbsp nutritional yeast
1 - 2 cloves garlic
1 tbsp capers (or 1-2 green olives chopped up)
juice from half a lemon
pinch of salt + black pepper
METHOD:
1 - Combine all ingredients in a blender until well combined.
2 - Drizzle on chopped romaine or kale and toss. Top with crispy vegan bacon and croutons. Enjoy!
